## About this wine

The Baron Dauvergne Fine Fleur Magnum is a Non-Vintage Blanc de Noirs Champagne, crafted solely from 100% Pinot Noir grapes from the Grand Cru village of Bouzy in the Montagne de Reims. Champagne Baron Dauvergne is a family-run estate with a winemaking legacy dating back to 1923. The Fine Fleur cuvée, established in 1983, serves as the house's signature wine, representing the elegance and character of Bouzy Pinot Noir. The wine's distinctive bottle design features a floral motif, a nod to the Champagne region's symbolism.

## Interesting facts

- Made entirely from Pinot Noir, a 'red' grape, yet it's a white sparkling wine (Blanc de Noirs).
- The distinctive daisy flower on the bottle symbolizes the Champagne region.
- The magnum format (1.5L) allows for slower, more graceful aging.
- Fine Fleur is the signature cuvée, first created in 1983.

## Food pairing

The wine's structure and red fruit notes complement richer dishes, while its controlled acidity and subtle brioche notes can cut through creaminess and enhance savory elements. The Pinot Noir base provides a good bridge for dishes with earthy or umami flavors.

## Wine making process

The Baron Dauvergne Fine Fleur Magnum is produced using 100% Pinot Noir grapes. Alcoholic fermentation occurs in temperature-controlled stainless-steel vats, followed by malolactic fermentation. The wine is aged on its lees for a minimum of 36 months, with some indications of up to four years, before a minimum of 3 months rest after disgorgement. The dosage is Brut, typically between 6 to 9 grams per liter.
