## About this wine

Cuvée du Chaos is crafted by Yann Bertrand, a highly regarded producer of the natural wine movement in Beaujolais. Based in the Fleurie appellation, Yann took over his family's estate and transitioned the vineyards to organic and biodynamic farming. This cuvée is sourced from old Gamay vines planted on granitic soils, which impart a distinct mineral character. Yann's philosophy focuses on minimal intervention to preserve the pure expression of the terroir and the vibrant energy of the Gamay grape.

## Interesting facts

- The name 'Chaos' reflects the challenging weather of the vintage and the chaotic nature of natural winemaking.
- Yann Bertrand trained under legendary natural winemakers Jean Foillard and Yvon Métras.
- The vines for this cuvée are up to 110 years old, yielding incredibly concentrated and complex fruit.

## Food pairing

The high acidity and low tannins of this old-vine Gamay make it incredibly versatile. It pairs beautifully with fatty meats like duck or pork, where the acidity cuts through the richness, while its earthy, red-fruit profile complements mushroom-based dishes and charcuterie.

## Wine making process

The grapes are harvested by hand and undergo a cold semi-carbonic maceration in concrete vats using native yeasts, without any sulfur additions during fermentation. The wine is aged for several months in old French oak barrels (demi-muids) and bottled unfined and unfiltered with minimal or no added sulfur, preserving its raw, natural character.
