## About this wine

Meinklang is a holistic Demeter-certified biodynamic farm estate run by the Michlits family in Pamhagen, Burgenland, near the Hungarian border. Operating as a complete self-sustaining ecosystem, the estate integrates herds of Angus cattle, ancient wild grains, fruit orchards, and unpruned grapevines to cultivate natural agricultural balance in harmony with the surrounding national park.

## Interesting facts

- The grapes come in part from Graupert vines left completely unpruned to grow wild.
- Meinklang operates as a self-sustaining farm with its own herd of Angus cattle.
- The wine is left undisgorged on fine lees, creating a natural foam when opened.

## Food pairing

The wine's energetic acidity, gentle fine bubbles, and light skin-contact tannins cut through rich seafood and creamy textures while balancing subtle Asian spices and fresh herbs easily.

## Wine making process

Crafted using the traditional Méthode Ancestrale. The hand-harvested Pinot Gris grapes undergo five days of skin maceration prior to pressing, followed by spontaneous fermentation with indigenous yeasts in stainless steel. Bottled before fermentation completes to capture natural carbonation, the wine remains unfiltered and undisgorged under a crown cap closure with minimal added sulfur.
