Folk Machine is a dedicated sub-label of Hobo Wine Company, founded in 2002 by nomadic winemaker Kenny Likitprakong. Operating without a central estate or owned winery, Hobo Wine Company focuses on organic farming, low-intervention practices, and unconventional grape varieties across California. The White Light cuvée was inspired by a journey to the energy vortexes of Sedona, Arizona, creating an energetic and textural multi-varietal white blend designed for everyday enjoyment.

## Food pairing

The high natural acidity, saline minerality, and vibrant citrus fruit of this light white blend effortlessly slice through delicate seafood oils and raw bar dishes while complimenting tangy goat cheese and subtle spice without overwhelming subtle flavors.

## Wine making process

The grapes are 100% organically farmed across certified vineyards in Mendocino and Lodi, picked early in the harvest to preserve high natural acidity and moderate alcohol. Each grape variety is fermented separately in stainless steel tanks using native yeasts. A partial malolactic fermentation occurs naturally. The wine is aged entirely in stainless steel tanks, seeing zero oak contact, and is bottled unfined and unfiltered with a slight touch of natural CO2 for a light, refreshing lift.
