## About this wine

Domaine du Fond Cyprès was founded in Escales by Laetitia Ourliac and Rodolphe Gianesini. Fède Imbriaque is a collaborative project created with Florent Chatillon, a former sommelier at Paris natural wine institutions including Septime and Le Verre Volé. The cuvée name blends Fède, referencing federation or alliance, with Imbriaque, an Occitan word for festive people who enjoy gathering to share wine. Working alongside winemaker friends, Florent harvests grapes and utilizes their cellar space to craft focused joint cuvées.

## Interesting facts

- Imbriaque is an Occitan word describing joyful people who love coming together over wine.
- Created with Florent Chatillon, former sommelier at Paris natural wine hotspots Septime and Le Verre Volé.
- The vineyard microclimate is shaped by opposing winds: the cold vent Cers and the warm Mediterranean vent Marin.

## Food pairing

The subtle skin tannins, tea-like texture, and vibrant acidity of this orange wine bridge white and red wine pairing logic. It easily supports rich white meats, Mediterranean herbs, savory spices, and hard cheeses without feeling heavy or astringent.

## Wine making process

Organically farmed Grenache Blanc and Grenache Gris grapes are hand-harvested from vineyards in northern Corbières with limestone and blue marl soils. The grapes undergo seven days of whole-cluster skin maceration to impart color, gentle phenolics, and complex aromatics. Fermentation occurs naturally with indigenous yeasts in stainless steel tanks, without any added sulfites. The wine is aged in neutral steel tanks before being bottled unfined and unfiltered.
