## About this wine

Azienda Agricola Foradori was established in 1901 and acquired by the Foradori family in 1939. In 1984, at age 20, Elisabetta Foradori took control of the winery. At a time when Teroldego was being overcropped, she dedicated her career to elevating this ancient native Alpine variety. Through mass selection, she isolated 15 distinct genetic biotypes of Teroldego and guided the estate into biodynamic viticulture. Today, the estate in Mezzolombardo is managed by her children Emilio, Theo, and Myrtha Zierock, standing as the international benchmark for the region.

## Interesting facts

- Elisabetta Foradori took over the estate at age 20 in 1984 and saved the native Teroldego grape from near extinction.
- The estate converted to biodynamic viticulture in 2002 and holds full Demeter certification.
- The wine is crafted from 15 distinct genetic biotypes of Teroldego preserved through decades of mass selection.

## Food pairing

The wine's bright alpine acidity and fine-grained tannins cut seamlessly through rich fats in game, pork, and duck, while harmonizing with earthy mushroom flavors and savory Alpine cheeses.

## Wine making process

Grapes are hand-picked from 12 distinct vineyard plots across the alluvial, gravelly-sandy soils of Campo Rotaliano. Fermentation occurs spontaneously using indigenous yeasts in cement tanks, partly incorporating whole bunches to maintain freshness. Maceration takes place on the skins in cement vessels before the wine matures for 12 months in a combination of concrete tanks and large neutral oak casks. Bottling takes place with minimal sulfur addition and no fining or filtration.
