## About this wine

Founded in 1870 in the town of Barolo, Francesco Rinaldi & Figli is one of the most historical and traditionalist estates in Piedmont. Today managed by Paola and Piera Rinaldi, the winery maintains a staunch classic philosophy. Cannubi is widely regarded as the premier cru in Barolo, noted for its unique soil combination of Tortonian sand and Helvetian clay which bestows a rare blend of elegance and longevity.

## Interesting facts

- Cannubi is Barolo's most historic vineyard, documented as far back as 1752.
- The winery uses only 5,000-liter Slavonian oak casks rather than modern French barriques.
- The estate owns 2.8 hectares in Cannubi, with vines in Cannubi Boschis planted starting in 1967.

## Food pairing

The high tannins, bright acidity, and full body of Barolo require rich dishes with ample proteins and fats, such as braised meats or aged cheeses, to bind with tannins and balance acidity. Earthy flavors like truffle and game harmoniously echo the complex aromatics of aged Nebbiolo.

## Wine making process

Hand-picked Nebbiolo grapes undergo fermentation and an extended submerged-cap maceration for 25 to 30 days in stainless steel tanks. The wine is aged for at least 36 months in 5,000-liter Slavonian oak barrels (botti grandi) and bottled unfined and unfiltered to preserve structure and terroir expression.
