## Wine making process

The production of Castello Bonomi Franciacorta Rosé Brut 2020 begins with a soft pressing of the 100% Pinot Noir grapes to extract the finest must. Vinification employs cold techniques, with fermentation taking place at around 14°C to preserve aromatic finesse. The base wine is then aged for about six months in steel tanks. A significant period of aging follows, with a minimum of 24 to 36 months spent on the lees in the bottle before disgorgement. The wine may also undergo further bottle aging after disgorgement.
