## About this wine

The Françoise Françoise (FF) range represents rare micro-cuvées crafted by renowned natural winemaker Charles Dufour using Pinot Noir grapes from his mother's, Françoise Martinot, organic vineyards in Neuville-sur-Seine. Released only once every three years, these singular bottlings reflect Françoise's personal taste: lower atmospheric pressure, minimal intervention, extended barrel and lees maturation, and intense vinous presence. The 2010 vintage marks a milestone moment as the year the estate achieved full organic certification and initiated this dedicated cuvée project.

## Interesting facts

- This cuvée is released only once every three years as a reflection of Françoise Martinot's personal preference for vinous Champagne.
- Aged sur lattes for over 11 years prior to manual disgorgement without added dosage or sulfites.
- Designed with lower carbonation pressure so it can be enjoyed near room temperature in still wine glasses.

## Food pairing

The intense vinous structure, zero dosage dry profile, and elevated acidity of this Blanc de Noirs cut effortlessly through rich fats and proteins, while its extensive eleven-year lees aging complements earthy, savory dishes like wild mushrooms, roasted poultry, and mature hard cheeses.

## Wine making process

Hand-harvested whole bunches of 100% Pinot Noir were pressed and fermented spontaneously using native yeasts in neutral oak barrels. The base wine underwent full spontaneous malolactic fermentation and aged for one year on fine lees without fining, filtration, or added sulfur. Bottled in October 2011, the wine aged sur lattes in bottle for over eleven years before hand-disgorgement in December 2022 with zero dosage (Brut Nature).
