## About this wine

Domaine Françoise Martinot is an organic estate situated in Chervey within Champagne's Côte des Bar region. The estate's vineyards are farmed organically and vinified by winemaker Charles Dufour, who launched the Bistrotage project using his mother's family vine holdings. Focusing on micro-terroir expression, low-intervention methods, and zero dosage, these singular Blanc de Noirs Champagnes celebrate pure regional character from Kimmeridgian clay and limestone soils.

## Interesting facts

- The code B.20 denotes that 100% of the grapes originate from the warm 2020 harvest.
- Crafted completely without added sulfites throughout vinification and bottling.
- Produced from organic family vineyard parcels planted in the 1970s and 1980s.

## Food pairing

High natural acidity, chalky saline minerality, and rich lees texture make this zero-dosage Blanc de Noirs exceptionally versatile at the table. The weight of structured Pinot Noir pairs seamlessly with rich poultry, duck, and charcuterie, while the sharp acidity cuts cleanly through rich fats.

## Wine making process

Hand-harvested whole-bunch Pinot Noir grapes undergo spontaneous fermentation with indigenous yeasts without added sulfur. Full malolactic fermentation occurs naturally. The vin clair ages for 12 months on fine lees split equally between neutral oak barrels and stainless steel cuves. Secondary bottle fermentation is initiated using natural grape concentrate, followed by over 40 months of lees aging before disgorgement without dosage or added SO2.
