## About this wine

Frédéric Cossard, a former dairy broker, established Domaine de Chassorney in 1996 in Saint-Romain, applying strict hygiene standards to pioneer natural, sulfur-free winemaking in Burgundy. Under his eponymous négociant label, Cossard sources organically farmed Chardonnay from 40- to 55-year-old vines planted in clay-limestone soils near Puligny-Montrachet, Volnay, and Pommard. His Bigotes cuvée represents an unadulterated expression of Burgundian terroir, crafted without oak intervention or synthetic additives.

## Interesting facts

- Founder Frédéric Cossard was a dairy engineer before becoming a pioneer of sulfur-free natural Burgundy.
- Vinified without oak, cultured yeast, or lees stirring, using concrete eggs for aging.
- Sourced from organic 40- to 55-year-old Chardonnay vines near Puligny-Montrachet, Volnay, and Pommard.

## Food pairing

This dry, energetic natural Chardonnay pairs brilliantly with lean proteins, seafood, and dishes with moderate richness. Its vibrant acidity cuts through creamy sauces and highlights delicate sweet seafood like langoustines, while its mineral depth complements earthy cheeses and herbs without requiring heavy oak weight.

## Wine making process

Grapes are organically farmed and harvested by hand at optimal maturity. Vinification begins with direct pressing of whole clusters followed by spontaneous fermentation driven entirely by indigenous yeasts. The wine undergoes zero bâtonnage and receives no added sulfur or cultured yeasts. Aging occurs in concrete eggs and neutral vessels on fine lees to maintain pure fruit precision. The wine is bottled unfined and unfiltered.
