## About this wine

Fritz Zimmer is a proprietary line of traditional German Rieslings created by Weinkellerei Römerhof. Managed by owner Heinz Eifel and his daughter Anne Eifel, the estate relies on over twenty generations of family winemaking heritage in the Mosel valley. The vineyards are situated along steep hillside slopes composed of Devonian slate, where winding river topography acts as a natural heat reflector to help ripen grapes during Germany's cool growing seasons.

## Interesting facts

- Steep blue slate cliffs along the Mosel River act as heat reflectors to help ripen grapes in a cool climate.
- Crafted by father-daughter team Heinz and Anne Eifel, drawing on over 20 generations of winemaking heritage.
- Fermented using native ambient yeasts and aged sur lie in stainless steel without any oak influence.

## Food pairing

The vibrant natural acidity cuts through rich proteins and oils, while delicate residual sweetness offsets heat from chili and Asian spices without overwhelming the palate.

## Wine making process

Grapes are hand-harvested in mid-October upon reaching Kabinett maturity. Cold skin maceration takes place for twelve hours prior to pressing. Fermentation is conducted using native ambient yeasts in temperature-controlled stainless steel tanks over approximately eight weeks. The wine is subsequently aged sur lie on fine lees in stainless steel without oak exposure to maintain purity and mineral texture.
