## About this wine

Domaine Mada was founded in 2017 by Édouard Adam and Pauline Bousquet near Gignac in the Languedoc region. The estate spans approximately eight hectares of vineyards cultivated without synthetic chemicals. The estate's name, Mada, is a clever palindrome of founder Édouard Adam's surname. After studying oenology in Montpellier and training alongside respected natural winemakers, Adam established his domain with a focus on low-intervention methods and site-expressive wines. The 2024 vintage of Furie showcases old-vine Cinsault grown on the schist soils of Cabrières.

## Interesting facts

- The domain's name, Mada, is an exact palindrome of founder Édouard Adam's surname.
- Winemaker Édouard Adam insists on whole-cluster fermentation, refusing to destem his grapes.
- Crafted from old-vine Cinsault grown on schist soils with an ultra-light 10% ABV.

## Food pairing

This light-bodied, chillable natural red wine pairs exceptionally well with lighter meats, earthy mushrooms, and charcuterie. High natural acidity cuts through rich fats, while very low tannins avoid metallic clashes when paired with lighter proteins and cheeses.

## Wine making process

Crafted from 100% hand-harvested Cinsault from old vines, the 2024 vintage underwent a dual-part whole-bunch fermentation. Part of the harvest underwent a one-week whole-bunch maceration, while the remaining portion underwent a three-day crushed whole-bunch maceration. Fermentation occurred spontaneously using native yeasts. The wine was blended in stainless steel tanks in mid-September 2024 and bottled in November 2024 without fining, filtration, or added sulfites.
