## About this wine

Founded in 1972 by Aldo Vajra in Vergne, the highest village in Barolo, G.D. Vajra was among the earliest estates in Piedmont to adopt organic viticulture. Today, the winery remains family-operated by Aldo and Milena Vaira alongside their children Giuseppe, Francesca, and Isidoro. Often referred to by sommeliers as a 'Baby Barolo,' G.D. Vajra's Langhe Nebbiolo comes from young estate vines situated across high-elevation Barolo crus (including Barolo, Novello, Sinio, and Bricco Bertone), where limestone-rich soils promote vertical elegance.

## Interesting facts

- Often referred to as a 'Baby Barolo,' sourced from young vines in top Barolo crus.
- G.D. Vajra was among the earliest estates in Piedmont to adopt organic viticulture in 1971.
- Harvested entirely by hand in early morning to preserve delicate aromas and crisp acidity.

## Food pairing

Nebbiolo's elevated acidity and firm tannin structure require dishes rich in protein, fat, or earthiness. The fat and protein in slow-cooked red meats or aged cheeses soften tannin perception, while mushroom dishes harmonize naturally with Nebbiolo's savory undertones.

## Wine making process

Grapes are 100% hand-picked in the early morning to capture pristine fruit purity. Fermentation involves an extended, gentle maceration (up to 19 days) in vertical vats to protect vitality and aromatic lift, followed by spontaneous malolactic fermentation. The wine is aged mainly in stainless-steel tanks (with a small portion in neutral oak barrels when required) to maintain pure varietal aromatics prior to early bottling.
