## About this wine

Poderi Cellario is managed by Fausto and Cinzia Cellario, representing the third generation of winemakers based in Carrù on the western edge of Piedmont's Langhe hills. The estate spans approximately 30 hectares across several vineyard sites. Working exclusively with native Piedmontese grape varieties, the family practices organic and biodynamic viticulture paired with low-intervention winemaking. The Galli vineyard sits in the Langhe hills on soils rich in calcareous clay, marl, and sandstone, capturing the traditional terroir of the region.

## Interesting facts

- Grapes come from the Galli vineyard, characterized by marne di Sant'Agata clay and sandstone soils.
- The wine ferments spontaneously with wild yeasts and ages in large untoasted Slavonian oak barrels.
- Bottled unfiltered and unfined according to low-intervention organic principles.

## Food pairing

Nebbiolo's elevated acidity and structured tannins pair seamlessly with fat-rich, savory proteins and rich sauces. Tomato-based dishes complement the wine's natural acidity, while protein and fat soften the firm tannic structure, creating a balanced and rich dining experience.

## Wine making process

Grapes are hand-harvested in small crates from vines averaging 17 years of age. Fermentation is spontaneous, utilizing only indigenous yeasts. Maceration spans 10 days to a month using the traditional submerged cap technique. The wine ages for 12 months in large-format, untoasted Slavonian oak barrels to preserve varietal purity, followed by six months of bottle refinement. Bottling occurs without fining or filtration, with minimal total sulfur additions.
