## About this wine

Gaspard is a specialized wine project conceived by Jenny Lefcourt, co-founder of the US importer Jenny & François Selections. The goal is to produce honest, low-intervention regional wines that express authentic Loire terroir at accessible prices.

## Interesting facts

- Praised by New York Times wine critic Eric Asimov as an exceptional, accessible natural wine.

## Food pairing

High acidity and light body make this wine a natural companion for fresh goat cheeses and tangy dairy, as well as delicate seafood. The zesty character highlights clean, green herbal flavors and cuts cleanly through light oils and fresh sea salt.

## Wine making process

Grapes are sourced from vines averaging 40 years of age grown in clay-limestone soils. Harvested fruit is immediately pressed and settled cold for 48 hours. Fermentation occurs over one month in 300 hl stainless steel tanks using natural ambient yeasts at cool temperatures. The wine spends six months aging on fine lees in stainless steel, undergoing light filtration and minimal sulfur addition at bottling.
