## About this wine

Domaine Gassier, led by fourth-generation winemaker Michel Gassier and his wife Tina, is located in the Southern Rhône Valley. Known for pioneering organic and regenerative viticulture, the estate focuses on showcasing the unique geological duality of the Rhône River. This cuvée blends grapes from the iron-rich red clay and rolled pebbles of the Right Bank with the limestone-rich soils of the Left Bank, creating a harmonious representation of the appellation.

## Interesting facts

- Domaine Gassier is a pioneer in regenerative viticulture, using cover crops like rye and clover to capture carbon and restore soil health.
- The wine blends grapes from both banks of the Rhône River, combining stony power from the Right Bank with limestone elegance from the Left.
- Winemaker Michel Gassier serves as Co-President of the regional AOC body, helping shape the future of Rhône Valley winemaking.

## Food pairing

The wine's robust body, moderate tannins, and vibrant acidity make it an exceptional partner for rich, savory dishes. The herbal notes of garrigue in the wine mirror Mediterranean herbs like rosemary and thyme, while the dark fruit flavors complement roasted meats and earthy mushroom dishes.

## Wine making process

The grapes are hand-harvested and mostly destemmed (around 75%). Fermentation occurs spontaneously with native yeasts at controlled cool temperatures to preserve fresh fruit aromas. Minimal sulfur is used, with none added during fermentation. The Grenache portion is aged for 12 months in concrete vats to maintain purity, while the Syrah and Mourvèdre components are aged in neutral French oak demi-muids for 9 months before final blending and bottling without fining.
