## Wine making process

The Trinity Hill Gimblett Gravels Chardonnay 2022 is produced from estate-grown grapes, hand-harvested and gently pressed. Fermentation is initiated with indigenous yeast in 500-litre French oak puncheons, with malolactic fermentation encouraged for added richness. The wine undergoes an 11-month aging period in these puncheons, 40% of which are new, followed by four months of maturation in tank on lees. The final alcohol by volume is 13.00%.
