## About this wine

The Glenelly Glass Collection Cabernet Sauvignon 2019 is a 100% Cabernet Sauvignon from Stellenbosch, South Africa. The Glass Collection range draws inspiration from antique glassware, symbolizing the parallels between winemaking and glassblowing. Glenelly Estate was founded by May-Elaine de Lencquesaing, who brought her Bordeaux winemaking expertise to the region. The estate is situated on the southern slopes of the Simonsberg Mountain, known for its decomposed granite and sandstone soils and cooler, east-facing aspects that promote gradual grape ripening. The 2019 vintage presented a complex growing season with a wet winter, cool spring, and fluctuating flowering conditions, leading to smaller berries and uneven ripening. Harvest conditions were challenging due to wet weather, but a subsequent dry spell allowed for extended ripening, resulting in balanced sugar and acidity levels.

## Wine making process

The Glenelly Glass Collection Cabernet Sauvignon 2019 is made from handpicked grapes. It undergoes natural fermentation with ambient yeast in stainless steel tanks, with daily pump-overs for extraction. Following fermentation, the wine remains on skins for 2-3 weeks before gentle pressing. The wine is then aged for 12 months in 300L French oak barrels, where malolactic fermentation also occurs. Glenelly Estate is a member of the Biodiversity & Wine Initiative (BWI).
