## About this wine

Fattoria Mani di Luna ('Hands of the Moon') was founded in Torgiano, Umbria, by three lifelong friends: Rocco Trauzzola, Simone Lazzarin, and Alessandro De Filippis. They revived a historical 30-hectare estate using natural, biodynamic farming practices. The playful name 'Glu Glu' references a whimsical local allegory about a turkey attempting to swim, while echoing the French concept of 'glou-glou'—effortlessly drinkable, refreshing natural wine crafted in harmony with lunar cycles.

## Interesting facts

- The wine re-ferments in the bottle using reserved unfermented frozen must saved from the exact same harvest.
- The estate operates entirely according to the Maria Thun biodynamic lunar calendar, including all cellar racking.
- Bottled completely undisgorged and unfiltered with zero added sulfur dioxide.

## Food pairing

The high, zesty natural acidity and delicate effervescence act as a palate cleanser against light fried dishes, rich cured meats, and creamy goat cheeses. The slight salinity and minerality complement raw fish and shellfish brilliantly.

## Wine making process

Made using the Méthode Ancestrale (Pét-Nat). Ancient Trebbiano varieties are whole-bunch pressed, while Trebbiano Spoletino undergoes 2 to 4 days of skin contact. Spontaneous primary fermentation takes place with native yeasts in stainless steel. Secondary bottle fermentation is triggered by adding unfermented frozen must saved from the same vintage. The wine is aged on fine lees, bottled undisgorged and unfiltered without added sulfites.
