## About this wine

Longaví is a collaborative project established in 2012 between Chilean winemaker Julio Bouchon and South African winemaker David Nieuwoudt. The name Longaví refers to a majestic stratovolcano in Chile's Maule Valley, meaning snake's head in the indigenous Mapudungun language. The Glup! range represents a return to ancestral roots and low-intervention winemaking, focusing on freshness and drinkability. Longaví partners with small-scale heritage growers in the southern Maule Valley, paying fair prices to help preserve centenarian, dry-farmed vines and support local rural communities.

## Interesting facts

- Glup! is an onomatopoeic nod to 'glou glou,' representing highly fresh, gulpable, and energetic wines.
- The winery logo features an African ouroboros wrapped around a vine, combined with an Andean condor.
- The wine is sourced from centenarian, dry-farmed bush vines planted in decomposed granitic soils.

## Food pairing

This fresh, medium-bodied Carignan thrives on its vibrant acidity and fine-grained tannins. It pairs beautifully with dishes that have moderate richness, such as roasted poultry, pork, or meaty fish like salmon and tuna, where the wine's acidity cuts through the fat. Its savory, earthy undertones also make it an exceptional match for wild mushrooms and cured meats.

## Wine making process

Sourced from old, dry-farmed bush vines in the Curimaqui zone of Maule, the grapes are hand-harvested in small crates. Vinification involves spontaneous fermentation with native yeasts in concrete tanks, preceded by cold maceration. The wine undergoes minimal intervention with no corrective additions. It is aged for 12 months in neutral, old 225-liter French oak barrels and bottled unfiltered to preserve its natural character and vibrant fruit profile.
