## About this wine

GostArt is the flagship sparkling wine from Winnica Gostchorze, founded by Guillaume Dubois, a Frenchman with Polish roots who trained in Champagne. Located in the Lubuskie region of western Poland, the estate is dedicated exclusively to traditional-method sparkling wines. Dubois champions the belief that Poland's cool climate is a world-class terroir for producing precise, high-acid sparkling wines. The vineyards are situated on rolling hills sloping down to the Oder River within a protected Natura 2000 zone, where the river acts as a vital thermal moderator to mitigate frost risks and extend the growing season.

## Interesting facts

- Founded by Guillaume Dubois, a Frenchman who moved to Poland to produce exclusively traditional-method sparkling wines.
- The vineyards are located within a protected Natura 2000 zone along the Oder River, which acts as a vital thermal moderator.
- For the 2021 vintage, the Pinot Blanc proportion was increased to 35% to add roundness and balance the vintage's electric acidity.

## Food pairing

The high, electric acidity of this traditional-method sparkling wine cuts directly through rich fats and salt, making it an exceptional partner for seafood, caviar, and creamy cheeses. The fine effervescence cleanses the palate, while the subtle autolytic notes complement delicate, savory dishes.

## Wine making process

This wine is crafted strictly according to the traditional Champagne method. Grapes are manually harvested and primary fermentation takes place in temperature-controlled stainless steel tanks. The secondary fermentation occurs entirely in the bottle using specialized equipment imported directly from the Champagne region. For the 2021 vintage, winemaker Guillaume Dubois made the strategic decision to blend 35% Pinot Blanc with Riesling and Pinot Gris to add mid-palate roundness. The initial release of the 2021 Cuvée was aged on its lees for 6 to 7 months, while reserve batches underwent longer aging up to 15 months.
