## About this wine

Domaine Marie-Thérèse Chappaz was founded when Marie-Thérèse took over her family vines in Fully in 1987. Recognized as 'La Grande Dame du Valais' and named a Swiss Wine Icon by Gault & Millau, she transformed the estate into a pioneer of biodynamic viticulture in Switzerland. The Les Dahrres single-vineyard plot in Chamoson sits at 500 meters elevation on gravelly, limestone-rich soils, creating a distinct chalky minerality and floral fragrance that sets it apart from Fully's granitic soils.

## Interesting facts

- Marie-Thérèse Chappaz was named a 'Swiss Wine Icon' by Gault & Millau in 2015.
- The estate has been Demeter-certified biodynamic since 2003.
- Les Dahrres is a single-vineyard plot located on chalk-rich limestone soils at 500 meters altitude.

## Food pairing

The wine's bright acidity, ultra-fine tannin structure, and expressive red fruit profile demand delicate, savoury meats, roasted poultry, and earthy wild mushroom dishes. Limestone-driven minerality pairs seamlessly with complex earthy flavours without overwhelming the wine's elegance.

## Wine making process

Farmed using strict biodynamic methods certified by Demeter, the grapes are hand-harvested and 100% destemmed. Fermentation occurs spontaneously with indigenous yeasts in stainless steel and open vats, accompanied by gentle maceration for around two weeks. The wine is aged for 8 months in Burgundian oak barrels (approximately 20% new) and bottled with minimal added sulfur.
