## About this wine

The Gran Caus Rosat 2022 is a distinctive rosé from the Penedès region of Catalonia, Spain, produced by Can Rafols dels Caus. It is made exclusively from 100% Merlot grapes. The winery, established by Carlos Esteva, is situated in the Massís del Garraf, a region known for its calcareous soils with marine fossils. Esteva's philosophy emphasizes expressing the unique terroir, authenticity, and a deep respect for nature, with vineyards farmed organically. The winery itself is recognized for its blend of tradition and modern innovation, including an underground cellar carved into the bedrock.

## Food pairing

The wine's firm acidity and medium body make it versatile. Its concentration and subtle tannic grip complement proteins and richer textures, while its fruit notes can bridge with herbaceous or citrus elements in dishes.

## Wine making process

The Gran Caus Rosat is produced from 100% certified organic Merlot grapes. The winemaking process involves a maceration of the grapes with their skins for approximately 18 hours, followed by the fermentation of the free-run juice. Fermentation is spontaneous, utilizing natural yeasts and occurring at low temperatures in stainless steel tanks. Following fermentation, the wine is aged in the bottle for a minimum of six months before its release. The annual production is around 12,000 to 13,000 bottles.
