## About this wine

Weingut Wasenhaus was founded by friends Christoph Wolber and Alexander Götze in Staufen im Breisgau, Baden. Having honed their craft at prestigious Burgundy estates such as Domaine Leflaive, Comte Armand, and Domaine de Montille, they returned to Baden to apply Burgundian precision to local terroirs. The Grand Ordinaire cuvée, originally created as a light-hearted nod to Burgundy's humble Bourgogne Grand Ordinaire classification, highlights the fresh, vibrant, and expressive side of Markgräflerland Spätburgunder.

## Interesting facts

- Founders Christoph Wolber and Alexander Götze trained at legendary Burgundy domaines including Leflaive and Comte Armand.
- Originally launched under the name 'Baden Nouveau' before evolving into 'Grand Ordinaire' with longer barrel maturation.
- Fermented in an gentle 'infusion style' with zero added sulfites and bottled completely unfined and unfiltered.

## Food pairing

This fresh, low-tannin, light-bodied red shines alongside lean meats, young alpine cheeses, and herb-forward dishes. Its high acidity cuts through charcuterie richness without overpowering light poultry or vegetarian courses.

## Wine making process

For the 2025 vintage, Wasenhaus adapted their cellar approach by fully destemming the grapes and applying a gentle 10-to-12-day infusion-style maceration enclosed in their own juice. Fermentation occurred spontaneously with native yeasts with no added sulfites or fining agents. The wine aged for six to eight months in used oak barriques and stainless steel tanks prior to being bottled unfiltered.
