## About this wine

Racines Grande Reserve Chardonnay is a sparkling white wine produced in the Sta. Rita Hills AVA of California. It is a collaborative effort between French winemakers Rodolphe Péters and Étienne de Montille, and American winemaker Justin Willett. The project, named 'Racines' to signify its French heritage and Californian roots, aims to blend Old World winemaking expertise with the unique terroir of California. The wine is made from 100% Chardonnay and produced using the traditional method, aged in bottle on lees for an extended period.

## Interesting facts

- A true Franco-American collaboration in winemaking.
- Crafted using the traditional method, like Champagne.
- Grapes sourced from iconic Sta. Rita Hills vineyards.
- Aims to rival the quality of top Burgundies and Champagnes.

## Food pairing

The wine's high acidity and minerality cut through rich and fatty foods, cleansing the palate. Its elegant structure and subtle complexity complement delicate seafood and white meats without overpowering them. The dry profile makes it versatile for a range of savory dishes.

## Wine making process

Racines Grande Reserve Chardonnay is produced using the traditional method, also known as méthode champenoise. Grapes are hand-harvested and whole-bunch pressed gently. The wine undergoes primary fermentation, followed by a secondary fermentation in the bottle to create its effervescence. It is then aged for at least 30 months on its lees, a process that develops complexity and texture. The wine is bottled without fining or filtration, and a dosage of 4.5 g/L (Extra Brut) is added before disgorgement. The 2018 vintage base was disgorged in November 2021.
