## About this wine

GraWü was founded by Leila Grasselli and Dominic Würth, who combined their surnames to create the estate name. Located in Cermes near Merano in South Tyrol, the winery focuses on producing authentic mountain wines from high-altitude vineyards in Val Venosta. Grown at 550 meters elevation on gneiss, granite, schist, and limestone soils, this Alpine red wine showcases the cool-climate terroir of the region.

## Interesting facts

- The winery name GraWü is a portmanteau of the founders' surnames, Grasselli and Würth.
- Grown at 550 meters altitude in Val Venosta on ancient granite, gneiss, and schist soils.
- Aged for 20 months in a combination of oak tonneaux and large acacia wood casks.
- Certified organic, unfined, unfiltered, and produced with minimal added sulfites.

## Food pairing

The crisp Alpine acidity and fine-grained tannins of this natural red pair seamlessly with earthy ingredients like wild mushrooms and truffles, as well as flavorful poultry and game meats like duck or goose.

## Wine making process

Grapes are hand-harvested from organically farmed 25-year-old vines. Fermentation occurs spontaneously using wild yeasts in large oak fermenters with up to four weeks of skin maceration. The wine ages for 20 months in oak tonneaux as well as large oak and acacia casks. Bottled unfiltered and un-fined with minimal added sulfur.
