## About this wine

Gulp Hablo Fresco is a collaborative natural wine project from Bodegas Parra Jiménez in Las Mesas, Cuenca, created alongside natural winemaker Juan Antonio Ponce. The estate practices Demeter-certified biodynamic farming across a self-sustaining ecosystem. This cuvée pays homage to traditional Spanish village winemaking, where growers co-planted red and white grapes together to craft lively, fresh table wines packaged in a 1.0-liter bottle.

## Interesting facts

- Packaged in a generous 1.0-liter bottle, providing 33% more wine than a standard bottle.
- Features co-fermentation of red and white grapes, reviving an old Spanish village tradition.
- Crafted from Demeter-certified biodynamic vineyards located on La Mancha's high-desert plateau.

## Food pairing

This light-bodied, chillable red wine features high acidity and soft tannins, making it flexible across many light dishes. Its lively red fruit profile complements cured meats, poultry, and Mediterranean tapas without heavy astringency.

## Wine making process

Produced from organic and biodynamic grapes grown at high altitude in La Mancha. Garnacha is fermented separately, while Syrah and white varieties (Verdejo, Airén, and Macabeo) are co-fermented with native yeasts in stainless steel. The wine is aged briefly in tank to retain fruit purity, remaining un-oaked, unfined, and lightly filtered with minimal added sulfur.
