## About this wine

Gut Oggau was founded in 2007 by Stephanie Tscheppe-Eselböck and Eduard Tscheppe in Oggau am Neusiedler See, restoring a 17th-century estate that had been abandoned for two decades. Certified Demeter biodynamic from the outset, the estate takes a minimalist approach to viticulture. Each bottle in their lineup is personified as a fictional member of the Oggau family, with custom face illustrations by artist Jung von Matt. Theodora represents the youthful, spirited, and slightly rebellious generation of the family estate.

## Interesting facts

- Each Gut Oggau bottle features a fictional family member drawn by artist Jung von Matt to reflect the wine's character.
- The 17th-century estate lay abandoned for 20 years before Stephanie and Eduard restored it with biodynamic principles.
- Theodora is crafted as a field blend from low-yielding biodynamic vineyards planted in calcareous gravel.

## Food pairing

Theodora's high, refreshing acidity and light-to-medium textural weight make it an outstanding companion for delicate seafood, fresh cheeses, and vibrant vegetable dishes. The crisp, clean acidity cuts effortlessly through soft fats like fresh goat cheese while lifting herbal and citrus nuances in the dish.

## Wine making process

Grapes are hand-harvested from 35 to 40-year-old vines grown on limestone and calcareous gravel soils. The fruit undergoes spontaneous fermentation with indigenous yeasts in oak vats, following a brief skin maceration of 2 to 10 days. The wine ages for 8 months on fine lees in large Stockinger oak barrels ranging from 500L to 3000L before being bottled unfined, unfiltered, and without added sulfur.
