## About this wine

Gut Oggau was established in 2007 by Eduard and Stephanie Tscheppe-Eselböck in Oggau, Burgenland. They revived an abandoned 17th-century estate whose soils had lain fallow for 20 years, allowing immediate conversion to certified biodynamic viticulture. Each wine in their portfolio represents a fictional family member drawn by German designer Jung von Matt. Timotheus is portrayed as the son of Mechthild and Bertholdi, bringing a grounded yet open-minded personality to the estate's lineup.

## Interesting facts

- Each Gut Oggau bottle features a unique illustrated character representing the wine's age and personality.
- One-third of the white grapes are skin-fermented for three weeks to add depth and textural grip.
- The estate was abandoned for two decades before Eduard and Stephanie converted it directly to Demeter biodynamics.

## Food pairing

Timotheus balances crisp acidity with fine skin-contact texture. This structure enables it to cut through moderately fatty meats like pork and smoked fish, while its dry mineral tension harmonizes cleanly with earthy spices and aged cheeses.

## Wine making process

The fruit comes from 40-year-old vines grown on limestone, slate, gravel, and sand soils near Lake Neusiedl. Harvested entirely by hand, one-third of the grapes undergo three weeks of skin fermentation, while the remaining two-thirds are directly pressed. Fermentation occurs spontaneously with wild yeasts in 500-liter used oak casks. The wine matures for 12 months in used 500-liter Stockinger oak barrels without lees stirring and is bottled unfined, unfiltered, and with no added sulfur.
