## About this wine

Founded by Craig and Kathryn Walt Hall, HALL Wines is a premier Napa Valley estate dedicated to crafting expressive, high-quality Cabernet Sauvignon. Kathryn, a former U.S. Ambassador to Austria, and Craig acquired the historic 1885 Bergfeld Winery in St. Helena in 2003, meticulously restoring it to blend historic charm with cutting-edge technology. The estate is equally famous for its world-class contemporary art collection, which features striking installations throughout the property, creating a unique sensory experience that bridges fine art and fine wine.

## Interesting facts

- HALL's St. Helena facility was the very first winery in California to achieve the prestigious LEED® Gold Certification.
- The estate features 'Bunny Foo Foo', an iconic 35-foot tall giant stainless steel rabbit sculpture that greets visitors.
- The flagship Kathryn Hall Cabernet Sauvignon secured the #2 spot on Wine Spectator's Top 100 list for its 2008 vintage.

## Food pairing

This bold, full-bodied Cabernet Sauvignon requires rich, protein-heavy dishes to soften its dense, muscular tannins. The high fat content in premium cuts of beef or lamb binds with the tannins, rendering the wine velvety on the palate, while the wine's vibrant acidity cuts through the richness of the meat. Earthy accompaniments like mushrooms and truffles beautifully mirror the wine's subtle forest floor and oak-derived spice notes.

## Wine making process

Winemaking is led by Vice President of Winemaking Megan Gunderson at their state-of-the-art, gravity-flow facility. The grapes are sourced from certified organic estate vineyards and select premium grower partners across Napa Valley. Following rigorous hand-sorting, the fruit undergoes small-lot fermentation in temperature-controlled stainless steel and concrete tanks using native yeasts to preserve site-specific character. The wine is aged for 18 to 22 months in French oak barrels, with approximately 50% to 65% new wood, to seamlessly integrate structure and complexity.
