## About this wine

Hayk & Hobbs is a collaborative venture created by legendary California winemaker Paul Hobbs and Bulgarian-American importer Robert Hayk. Inspired by how Paul Hobbs helped highlight Argentina's high-altitude potential with Malbec, the duo set out to demonstrate the world-class terroir of Bulgaria's Sakar Mountain, a region with 4,000 years of winemaking heritage. Sourced from a single vineyard planted in 2014 near Vaskovo Village, this cuvée combines Old World restraint and limestone minerality with New World precision.

## Interesting facts

- Created as a collaboration between Napa icon Paul Hobbs and importer Robert Hayk.
- Sourced from a single vineyard located at 290m altitude on limestone-rich cinnamon forest soils.
- Inaugural commercial release produced in a highly limited quantity of ~600 cases.

## Food pairing

The structured, fine-grained tannins and high flavor concentration of Cabernet Sauvignon pair seamlessly with rich proteins and fats that soften tannin perception. High acidity cuts through heavy sauces, while mineral and savory nuances complement earthier, herb-infused, or truffle-laced dishes.

## Wine making process

Harvested entirely by hand into small crates with meticulous manual sorting, the grapes undergo small-batch fermentation in stainless steel tanks using selected yeast cultures. Malolactic fermentation is completed in stainless steel. The wine is aged for 12 months in 225-liter second-use French oak barrels. It is bottled unfined with light filtration before release.
