## About this wine

Domaine Hervé Villemade is located in Cellettes within the Cheverny appellation of the Loire Valley. Established in 1939 by Désiré Villemade as Domaine du Moulin, the estate passed to Hervé Villemade in 1995. In the late 1990s, inspired by Beaujolais legend Marcel Lapierre and neighbor Thierry Puzelat, and after suffering a personal allergy to sulfur dioxide, Hervé transitioned the entire estate to organic viticulture. Certified organic since 2002, the domaine is recognized as a benchmark for low-intervention winemaking in Touraine.

## Interesting facts

- Hervé Villemade converted the domain to organic farming after developing a severe allergy to synthetic sulfur dioxide.
- The addition of Pineau d'Aunis gives this Loire rosé a distinctive white pepper and botanical aroma profile.
- The estate was originally founded in 1939 under the name Domaine du Moulin.

## Food pairing

This vibrant, high-acid rosé thrives alongside light, fresh dishes that complement its crisp structure and subtle botanical spice. Fresh goat cheese, delicate seafood, and charcuterie provide the perfect balance without overpowering the wine's lively nature.

## Wine making process

Harvested entirely by hand from vines grown in sandy clay and flint soils. The fruit undergoes direct pneumatic pressing followed by cold settling of the gross lees for 18 to 24 hours. Fermentation occurs spontaneously with indigenous yeasts in stainless steel and concrete tanks without chaptalization or synthetic additives. The wine is aged on fine lees in stainless steel and fiberglass vats and bottled unfined and unfiltered with minimal sulfur additions.
