## Food pairing

The medium body and supple tannins of this Pinot Noir make it versatile. Its fruit-driven character complements lighter proteins and earthy flavors, while its moderate acidity can cut through moderate richness.

## Wine making process

The winemaking process for Humo Blanco Pinot Noir begins with bunch selection to ensure grape quality. De-stemmed and crushed grapes are then placed in concrete and stainless steel vats. A five-day cold maceration is followed by fermentation using native yeasts. Post-fermentation maceration lasts for 25-30 days. The wine then undergoes malolactic fermentation in barrels and is matured for 10 months in second-fill barrels.
