## Food pairing

The wine's robust body and ripe tannins are well-suited to rich protein dishes, where they can soften and integrate with the meat's texture and fat. The wine's dark fruit notes can complement savory and slightly gamey flavors, while its structure can stand up to intense preparations.

## Wine making process

The I'Rennero Suvereto Merlot undergoes alcoholic fermentation in stainless steel tanks under controlled temperatures. Following this, malolactic fermentation is conducted in barrique. The wine is then aged for approximately 18 months in a mix of new and second-passage barriques. A further period of at least 12 months of bottle aging precedes its market release. The vineyard management philosophy at Gualdo del Re prioritizes minimal intervention, allowing the vines to develop independently.
