## About this wine

Il Torchio is an artisan estate situated in Castelnuovo Magra, within Liguria's eastern corner near the Mediterranean coast. Originally founded by Giorgio Tendola, a pioneering figure in bottling local Vermentino, the estate is named after the communal olive press historic to the area. Following Giorgio's passing in 2011, his young grandchildren, Gilda and Edoardo Musetti, stepped up to take over the winery at ages 26 and 18. Today, they manage a rare contiguous 12-hectare property, creating authentic coastal wines featuring eye-catching labels illustrated by local artist Francesco Musante.

## Interesting facts

- The estate name Il Torchio honors an ancient communal olive press operated by the family for generations.
- Siblings Gilda and Edoardo Musetti took over full estate control in 2011 when they were just 26 and 18 years old.
- The whimsical, colourful bottle labels are custom works created by acclaimed Ligurian artist Francesco Musante.

## Food pairing

The wine's vibrant acidity and maritime salinity cut effortlessly through the richness of fried seafood and complement herbaceous dishes like traditional basil pesto. Its crisp structure acts as a palate cleanser alongside delicate white fish and fresh young cheeses.

## Wine making process

Grapes are organically farmed and harvested entirely by hand from vineyards planted on silica and clay soils. In the cellar, wild yeasts drive spontaneous fermentation in temperature-controlled stainless steel tanks. Approximately 50 percent of the harvest undergoes a short 18 to 48-hour skin contact maceration to enhance structure, while the remaining half is directly pressed. The wine matures on its fine lees in stainless steel for 3 to 6 months before bottling, preserving purity without oak contact. It is bottled unfined and unfiltered with minimal added sulfur.
