## About this wine

Azienda Agricola I Lori was established in 2010 in Cori, located within the province of Latina in Lazio. Initially celebrated for producing high-grade organic extra virgin olive oil from centuries-old Itrana trees, the family estate expanded into dedicated winemaking in 2018. Cultivated on volcanic, mineral-dense tufaceous soils at 350 meters elevation along the slopes of the Lepini Mountains, the estate focuses on certified organic production of indigenous Lazio varieties.

## Interesting facts

- Made from 100% Nero Buono di Cori, a rare red grape native to the volcanic slopes of Lazio.
- The estate won Gambero Rosso's top olive oil award before launching its organic winery in 2018.
- Vineyards sit on mineral-rich volcanic tuff soils 350 meters high, cooled by Tyrrhenian sea breezes.

## Food pairing

The structured tannins, crisp acidity, and rich dark fruit profile of Nero Buono match perfectly with savory, fat-rich protein dishes like game, grilled meats, and aged cheeses.

## Wine making process

Harvesting takes place by hand during the first ten days of October. The grapes undergo traditional red wine vinification with controlled-temperature fermentation, accompanied by daily pumping-over and manual punching-down for 15 to 20 days. Post-fermentation, the wine matures on its fine lees (fecce nobili) for around 90 days to enhance its structural depth and mouthfeel before bottling.
