## About this wine

Enoz is the winemaking project of Roberto Zeno, whose surname spelled backwards gives the winery its distinctive name. Located at Masseria Torricella in Sessa Aurunca, Campania, the estate sits on the extinct slopes of the Roccamonfina volcano within the ancient Ager Falernus winemaking region. Founded in 2013, the winery operates strictly organically and biodynamically in a secluded ecosystem surrounded by natural forests, olive groves, and wheat fields.

## Interesting facts

- The estate name Enoz is simply founder Roberto Zeno's surname spelled backwards.
- Fermentation and aging take place entirely in terracotta amphorae inside a natural tufa cave.
- Unlike rich Puglian Primitivo, this volcanic Campania expression yields a fresh mountain profile.

## Food pairing

The vibrant volcanic acidity and fine, firm tannins of this natural Primitivo cut through rich fats in roasted pork, lamb, and game, while its savory spice and mineral undertones complement tomato-based spicy pasta dishes and aged sheep milk cheeses.

## Wine making process

Hand-harvested in late September from organic and biodynamic vines grown at 280 meters altitude on volcanic soils. Spontaneous fermentation occurs with indigenous yeasts in terracotta amphorae set inside a natural tufa cave cellar, accompanied by 15 days of skin contact maceration. The wine matures in clay vessels followed by three months of bottle refinement before being released unfined, unfiltered, and with minimal added sulfites.
