## About this wine

In the local Piemontese dialect, a 'Ciabot' refers to a small stone cottage or vineyard shelter found on historic Langhe hillsides. The Traversa family began cultivating vines in Neive on the Canova hill in 1834 under ancestor Giacomo Traversa. Own-estate bottling commenced in 1978 under Giuseppe Traversa, whose name remains on the bottle today. The estate is currently managed by his sons, Flavio and Franco Traversa, who maintain a classic, low-intervention approach to Piemontese winemaking. Sourced from vines on the Canova hill right alongside fruit reserved for their flagship Barbaresco, Il Ciabot provides a high-level Nebbiolo experience.

## Interesting facts

- In Piemontese dialect, a 'Ciabot' is a small stone cottage or shelter found on historic Langhe hillsides.
- The Traversa family has cultivated vines on the Canova hill in Neive since 1834.
- This wine functions as a declassified Barbaresco, using grapes grown alongside top single-vineyard plots.

## Food pairing

Nebbiolo's natural vibrant acidity and firm tannin structure demand rich dishes containing ample fats, protein, or umami elements. Rich meats, egg pastas, and aged cheeses soften the wine's powerful tannic grip, allowing the fragrant red fruit and delicate savory spice notes to step into balance.

## Wine making process

The grapes are 100% Nebbiolo harvested by hand with careful bunch selection from the Canova hill in Neive. Vinification begins with skin maceration and natural fermentation driven by indigenous yeasts in stainless steel tanks. Following fermentation, the wine matures for 12 months in neutral, used oak casks of various sizes before receiving 6 additional months of bottle aging prior to release. A minimal amount of sulfur is added at bottling.
