## About this wine

Il Pingro is an artisanal natural wine project founded by cousins Chiara and Margherita, who set out to recover their grandmother Nada's old coastal vineyards in Maremma Toscana. Produced in close collaboration with Dario Marinari and Ezequiel Allassia of Agricola I Forestieri, the wine reflects the maritime terroir of Grosseto, located just one kilometer from the Mediterranean Sea. The name 'Il Pingro' comes from 'Il Pingrosso', referencing a towering maritime pine tree planted by their great-grandfather in the middle of the vineyard for shade, which is also depicted on the wine's label.

## Interesting facts

- Named after a solitary maritime pine tree ('Pingrosso') planted by the founders' great-grandfather.
- Vineyards sit just 1 km from the Mediterranean coast on sandy, mineral-rich soils.
- Vinified using an alternating 'millefeuille' technique of whole-cluster and destemmed grapes.

## Food pairing

This light-bodied, fresh natural red features vibrant acidity and delicate tannins, making it exceptionally versatile. It excels alongside charcuterie, light pasta, grilled summer vegetables, and light meats, and its distinct coastal salinity even allows it to pair beautifully with grilled fresh fish.

## Wine making process

Farmed by hand using natural and biodynamic principles with zero synthetic chemicals. Spontaneous fermentation occurs with wild yeasts using a 'millefeuille' maceration technique, alternating layers of whole grape clusters with destemmed grapes over 15 days. The wine is aged exclusively in stainless steel tanks to maintain primary fruit character, crisp acidity, and sea-spray salinity before being bottled unfiltered and unclarified with minimal added sulfur dioxide.
