## About this wine

Stagiaire is a natural wine project created by Brent Mayeaux following extensive cellar work alongside famed natural producers across Europe and Australia. This cuvée originates from the historic Enz Vineyard in San Benito County's Lime Kiln Valley AVA. The dry-farmed vineyard sits on deep limestone and granite soils in the shadow of the Gabilan Mountains. The vines have a unique history, as the original Sauvignon Blanc stock was reclaimed after growers cut below previous red grape grafts.

## Interesting facts

- The vineyard's original Sauvignon Blanc vines were reclaimed after growers cut below previous red grape grafts.
- Founder Brent Mayeaux trained under natural wine pioneers including Philippe Bornard in Jura and Gareth Belton in Australia.
- Sourced from the historic, dry-farmed Enz Vineyard in Lime Kiln Valley, planted on deep limestone and granite soils.

## Food pairing

The wine's vibrant acidity, tactile phenolic texture, and bright citrus profile cut through rich animal fats while seamlessly accompanying fresh seafood, tangy goat cheeses, and herb-driven summer dishes.

## Wine making process

Hand-harvested fruit undergoes a brief ten-day skin maceration before being pressed prior to active fermentation. Spontaneous fermentation proceeds with native yeasts in stainless steel tanks, followed by approximately one year of aging in neutral oak barrels. The finished wine is bottled unfined, unfiltered, and with zero added sulfur dioxide.
