## About this wine

Tenuta Baroni Campanino is situated inside the protected natural park of Mount Subasio near Assisi in Umbria. The estate practices heroic viticulture in high-altitude mountain plots surrounded by forests and natural vegetation, isolated from industrial agriculture. Founder Simone transitioned to biodynamic farming to produce wines deeply tied to their environment, operating under an ethos that values patience and minimal intervention in harmony with the local landscape.

## Interesting facts

- Vineyards are situated at altitudes up to 900 meters inside the Mount Subasio protected natural park.
- Aged up to 24 months in glass-lined concrete vats with zero oak influence to preserve pure mountain fruit.
- Practices certified organic and biodynamic heroic viticulture with all vineyard work performed manually.

## Food pairing

High-altitude Sangiovese features vibrant acidity and fine tannins that balance rich, fatty meats such as lamb and wild boar. The acidity cuts through fat and pairs seamlessly with tomato-based pasta sauces, while the structured core matches aged sheep's milk cheeses and savory charcuterie.

## Wine making process

Crafted from organically and biodynamically farmed Sangiovese harvested entirely by hand in small crates. Fermentation begins spontaneously using wild yeasts naturally present on the grape skins and in the cellar environment, taking place in stainless steel and concrete tanks without artificial temperature control. The wine undergoes extended skin maceration before aging for 18 to 24 months in glass-lined concrete vats. It is bottled unfined, unfiltered, and without added sulfur dioxide.
