## About this wine

Vini Viti Vinci is a micro-négociant operation created in 2008 by Nicolas Vauthier, former co-owner of the renowned natural wine bar Aux Crieurs de Vin in Troyes. Based in Avallon, Vauthier works with trusted organic and sustainable growers in the lesser-known northern reaches of Burgundy, such as Irancy, Épineuil, and Chitry. The 'Les Ronces' cuvée comes from a single parcel of south-facing vines planted on Kimmeridgian limestone marl and clay, located in one of Irancy's warmest hillside climats.

## Interesting facts

- The domain name Vini Viti Vinci is a humorous play on Julius Caesar's famous phrase Veni, Vidi, Vici.
- Founder Nicolas Vauthier learned natural winemaking techniques alongside acclaimed icon Philippe Pacalet.
- Les Ronces is one of the sunniest south-facing climats within the northern Irancy appellation.

## Food pairing

The lively northern Burgundian acidity and soft, silky tannins of this red Pinot Noir make it exceptionally versatile at the table. It cuts through rich fats in rustic charcuterie, duck, and braised beef dishes while balancing earthiness in mushroom courses and washed-rind regional cheeses like Époisses.

## Wine making process

Hand-harvested Pinot Noir grapes are vinified using 100% whole clusters and undergo a 17-day semi-carbonic maceration in neutral vessels and wooden vats with daily punch-downs. Fermentation occurs spontaneously with indigenous yeasts without chaptalization or temperature manipulation. After pressing, the wine ages for 12 months in neutral oak vats and large barrels, followed by 10 months in stainless steel tanks. The wine is bottled unfined and unfiltered with a minimal addition of sulfur (~10 mg/L).
