## About this wine

Iroik is a single-vineyard Vi de Paratge produced by Alicia i Josep Viticultors in Porrera, within DOQ Priorat. Founded in 2017, the estate focuses on restoring abandoned high-altitude vineyards using organic and regenerative viticulture. The grapes come from Via Tossal, a steep site at 630 meters altitude planted on traditional Llicorella slate soils. Alicia and Josep recovered this abandoned plot in 2019, practicing heroic manual viticulture on its steep slopes.

## Interesting facts

- Grown on heroic 42% gradient slopes at 630m elevation where machinery cannot be used.
- The Via Tossal vineyard was abandoned for over a decade before being recovered in 2019.
- Cultivated on signature Llicorella slate soils under certified organic and regenerative farming.

## Food pairing

The full body, high alcohol, and pronounced structure of high-altitude Priorat Syrah pair best with rich, savory protein dishes and aged cheeses. Vibrant acidity helps cut through rich meats while integrated tannins complement grilled protein textures.

## Wine making process

Hand-harvested Syrah grapes are collected in small crates to preserve berry integrity. Following manual selection, grapes are destemmed, crushed, and fermented under controlled temperatures in stainless steel tanks. The wine matures for 4 months in 300-liter French oak barrels, half of which are new, balancing structural integration with pure fruit expression.
