## About this wine

Maison Jacquesson, founded in 1798 in Châlons-sur-Marne and now located in Dizy, is renowned for its progressive approach to Champagne production. In 2000, brothers Jean-Hervé and Laurent Chiquet revolutionized the house by launching the 700 Series, replacing the concept of a standardized non-vintage house style with numbered cuvées designed to highlight the individual identity of each base harvest. Cuvée No. 749 is predominantly built upon the 2021 harvest from Grand Cru and Premier Cru vineyards in the Grande Vallée de la Marne and Côte des Blancs, complemented by micro-oxygenated reserve wines.

## Interesting facts

- In 1844, Adolphe Jacquesson patented the wire cage (muselet), which is still used worldwide today for champagne bottles.
- Emperor Napoleon I awarded Jacquesson a gold medal in 1810, making it one of his personal favorite Champagne houses.
- The 700-series numbering system traces back to Jacquesson's original 1898 cellar registry where Cuvée N° 1 was recorded.

## Food pairing

The intense minerality and vibrant acidity of this Extra-Brut Champagne slice through rich textures like cream and seafood fats, while its autolytic notes harmonize naturally with aged cheeses and roasted poultry.

## Wine making process

Harvested by hand from Grand Cru (Aÿ, Avize, Oiry) and Premier Cru (Dizy, Hautvillers, Champillon) plots, the grapes undergo spontaneous fermentation using indigenous yeasts in large oak vats (foudres). The wines receive no fining and no filtration to preserve full mineral character and depth. Base wines from the 2021 harvest comprise 72% of the blend, enriched with 28% reserve wines from previous 700-series releases. Following secondary fermentation, the wine matures on its lees in bottle for three to four years before disgorgement with an Extra-Brut dosage of 2.0 g/L.
