## Wine making process

Janis is produced using the Méthode Ancestrale, an ancient technique for creating sparkling wine. Grapes are hand-harvested from biodynamically farmed vineyards. Fermentation begins with indigenous yeasts in stainless steel. The wine is then bottled before fermentation is complete, trapping the natural carbon dioxide to create its signature sparkle. It ages on its lees in the bottle for nine months, developing complexity. The wine is then riddled and disgorged at the estate. The 2022 vintage was notably made without added sulphites, aligning with the estate's philosophy of minimal intervention.
