## About this wine

Domaine Jean-Philippe Fichet is based in Meursault in the heart of Burgundy's Côte de Beaune. Jean-Philippe Fichet is a third-generation winemaker who made his first vintage in 1981 at age 20. The domaine is celebrated for its meticulous, parcel-by-parcel approach to viticulture. The Bourgogne Côte d'Or appellation was introduced in 2017 to highlight regional Burgundies sourced exclusively from the prized slope vineyards of the Côte d'Or. The fruit for this bottling comes primarily from old-vine Chardonnay plots situated just outside the official Meursault village line.

## Interesting facts

- Often dubbed 'Baby Meursault' because its vines sit mere meters from official Meursault Village appellation boundaries.
- Jean-Philippe Fichet made his very first vintage in 1981 at just 20 years old.
- The AOC Bourgogne Côte d'Or classification was created in 2017 to distinguish hillside vineyards from flat valley floor sites.

## Food pairing

The high natural acidity and textured mouthfeel of this white Burgundy make it an ideal partner for rich, creamy, or buttery sauces, which are cut through by the crisp citrus core. Seafood and poultry mirror the wine's refined elegance, while the subtle mineral undertones complement earthy soft cheeses and nutty elements like toasted almonds or sautéed mushrooms.

## Wine making process

The Chardonnay grapes are hand-harvested from old vines ranging from 17 to over 70 years of age. The domaine practices sustainable and organic viticulture, using custom-made compost to foster healthy soil biology. Fermentation occurs naturally with indigenous yeasts in oak barrels and foudres. The wine is aged in large 500-liter and 600-liter wooden foudres as well as older barrels, keeping new oak influence low. Prior to bottling, the wine is racked and finished in stainless steel tanks to enhance clarity, mineral focus, and dynamic freshness.
