## About this wine

Jean Touitou, founder of the French minimalist fashion house A.P.C., created Banibano in collaboration with distant relative and viticulturist Jean Boujnah. The project focuses on an unsprayed single parcel of old-vine Muscat d'Alexandrie located in Kélibia on Tunisia's Cap Bon peninsula. Reconnecting with his heritage, Touitou aimed to produce a pure, unpretentious natural white wine that captures the authentic coastal terroir of Cap Bon.

## Interesting facts

- Banibano was Jean Touitou's childhood nickname in Tunis, translating roughly to 'good, good'.
- Touitou rediscovered the old-vine parcel in Kélibia while visiting Tunisia to restore his grandfathers' graves.
- The project philosophy was created to make 'a natural wine for people who don't like natural wine'.
- It is crafted from an unsprayed, coastal single parcel overlooking the Mediterranean Sea.

## Food pairing

This vibrant, bone-dry Muscat with coastal salinity and intense floral aromatics pairs seamlessly with fresh seafood, shellfish, and light Mediterranean or North African dishes featuring bright citrus or gentle spice.

## Wine making process

Harvested entirely by hand from sandy limestone soils, the grapes are vinified with minimal intervention. Fermentation occurs spontaneously using exclusively indigenous yeasts without temperature manipulation. The wine rests for over six months in stainless steel tanks prior to bottling unfined, unfiltered, and with zero added sulfur dioxide.
