## About this wine

Jean-Yves Péron established his estate in 2004 in Savoie after studying oenology in Bordeaux and training with legendary natural winemakers Thierry Allemand in Cornas and Bruno Schueller in Alsace. Located near Albertville in Conflans and Chevaline, Péron works with ancient, steep terraced vineyards situated between 350 and 550 meters elevation. He focuses on native Savoyard grape varieties like Altesse, restoring historic plots planted on micaschist and shale soils to showcase the unique high-altitude sub-Alpine terroir.

## Interesting facts

- Winemaker Jean-Yves Péron trained under Thierry Allemand in Cornas and Bruno Schueller in Alsace.
- The Altesse vines grow on steep micaschist terraces and range from 30 to over 100 years old.
- Made with up to 2.5 months of skin-contact maceration without any added sulfites or filtration.

## Food pairing

The high driving Alpine acidity and complex phenolic structure from skin contact enable this wine to cut through rich, fatty meats like roast duck and pork belly. Its deep savory and warm spice nuances harmoniously pair with aged alpine cheeses and earthy mushroom preparations.

## Wine making process

Crafted from old-vine Altesse harvested by hand on steep Alpine terraces. The grapes undergo whole-cluster spontaneous fermentation with indigenous yeasts in neutral oak vats. The key technique is extended skin-contact maceration lasting between 6 weeks and 2.5 months with daily manual punchdowns. The wine matures for 12 months on fine lees in 300-liter neutral oak barrels before being bottled unfined, unfiltered, and completely without added sulfur.
