## Wine making process

Jonty's Ducks Pekin Red 2020 is produced using grapes from vines aged 11-14 years, grown on specific soil blocks. The grapes are hand-picked and then destemmed and crushed. Fermentation occurs with wild yeasts in closed stainless steel tanks, peaking at 30°C, followed by post-fermentation maceration. Malolactic fermentation takes place, and the wine is then matured for 12-14 months in used French oak barrels (2nd, 3rd, and 4th fill). The estate employs sustainable and natural viticulture, focusing on organic and biodynamic principles.
